What is a pair?

A pair is a pool on Robinhood Chain. One side is a stock token. The other side can be any token. The pool is Uniswap v3 or v4.

We index every pair we find. We look for new pools all the time. Each pair has a kind. See Kinds.

`createdBlock`	Block where the pool was made
`createdTs`	Time of that block, or `null`
`liquidityUsd`	Pool value, when known
`stockGapPct`	Last gap for the stock side, when comparable
