What is a fresh pair?
A fresh pair was made in the last 24 hours. We use the block time of the pool. The API field is createdTs.
The block time is read after the pool is found. Newest pools are read first. So a fresh pair shows its age within minutes. Old pools fill in over time.
A pair with no time yet says time pending. It still sorts by block. It is not counted as fresh.

The list is newest first. It sorts by createdTs, then by createdBlock.
